Definitions

Aging: Mill Creek Meats dry age all our beef for 25 days.  This allows enzymes naturally present in the meat to break down muscle tissue resulting in improved texture and flavor.

Live weight:  the weight of the animal while living.

Carcass or dressed weight:  refers to the weight of an animal after being partially butchered - after removing all internal organs, less desirable portions of the tail and legs.

Boxed weight:  cuts that are taken home and used for meals.

Vacuum packed:  air is taken out of a plastic bag to allow meat to stay fresh longer.

Hormone free:  no Mill Creek cattle are ever given growth hormones.
